Blueberry Buckle has been a family recipe for at least 40 years. It is the best blueberry coffee cake you will ever taste. It is light and fluffy, moist in the center, with a crispy brown sugar topping

Foodala - Blueberry Buckle.
Blueberry Buckle

Batter:
Shift together:
2 cups of flour
2 tsp. baking soda
1/2 tsp. salt
Cream:
1/4 cup of butter (at room temperature)
3/4 cup of sugar
Beat In:
1 egg
- Add flower mixture
1/2 cup of milk – until damp
Fold In: (with a spatula)
2 cups of rinsed blueberries (about 3 to 4 packs of the small packs of blueberries)

Pour batter into 8” x 8” pan

Topping:
1/2 cup of sugar
1/3 cup flower
1/2 tsp. cinnamon
1/4 cup of butter

Add topping evenly to the top of the batter

Bake:
At 375° for 45 to 50 min.

Take a toothpick and stick it into the middle of the cake. If the toothpick is wet, then it needs to go back into the oven until the toothpick comes out dry.
